Roasted Fennel Salad or Crostini

Hi guys, here is the recipe for Roasted fennel salad or crostini! Hope you enjoy them as much as my famiglia does. They make a great entree salad and the crostini make for great bites with a cocktail before your meal.
This recipe makes about 4-6 salads or about 20 crostini
(it really depends on the size of the fennel. I just made them over the weekend and the fennel was so large I only used two and made 30 crostini and could’ve easily made 8 salads. Other times when fennel is small, I can only get 4 salads and 20 crostini)

Here’s what you’ll need:

2 fennel bulbs( thinly sliced) A lil note: try to keep some of the core of the fennel in tact so you have some nice “fans” of fennel in there, but don’t worry if they break apart, they always do and they taste just as good)

Salt n pepper
Olive oil
2 tblspn Brown sugar
2 tblspn Maple syrup
2 cloves Garlic( crushed)
Prosciutto
( about 3 thickly sliced then chopped up into little chunks/cubes)
Goat Cheese( plain soft. One large log is plenty. If you only find the small ones, get a couple to be safe.)
For a Salad: you’ll need arugula, balsamic vinegar, and dried cranberries( optional)

For Crostini: you’ll need a baguette for about 15-20 crostini

1. After slicing your fennel, toss it in a bowl with all your ingredients! It’s that easy.
Make sure they’re nice and coated if you feel like adding a bit more maple syrup go ahead.
2. Spread everything on a baking pan and put in the oven at 350 degrees for 20-25 minutes until fennel is golden and softer.
3. For a salad; toss your arugula in olive oil, balsamic vinegar, a little bit of salt n pepper. Lay some of the fenel/prosciutto mix on top. I’ve also sprinkled a little dried cranberries and some goat cheese on top..the mix of goat cheese with the fennel mix tastes delish.
4. For crostini; slice a baguette, drizzle slices with olive oil. Spread soft goat cheese on each baguette round. Then top with a piece of fennel ( or a couple of they’ve broken apart) and don’t forget to put a couple of the little cubes of prosciutto on each one too. Bake in the oven for about 10 minutes to warm everything together and there you go!
Crostini or Salad, it’s making my mouth water just thinking about the sweet n salty fresh taste of them.
